A Classic Beef Burger

A seeded bun, a thick beef patty, lettuce and tomato. The only rules: handle the meat as little as possible and salt it just before it goes in the pan.

Serves 4 · Prep 10 min · Cook 10 min

Ingredients

  • 600 g ground beef (20 % fat)
  • Salt and black pepper
  • 4 sesame burger buns
  • 4 lettuce leaves
  • 1 tomato, sliced
  • Ketchup or mustard to serve

Method

  1. Divide the beef into four and shape loose patties slightly wider than the buns. Press a dimple into the centre of each.
  2. Heat a heavy pan or grill until very hot. Season the patties on both sides.
  3. Cook 3–4 minutes per side, turning once, until the centre reaches 71 °C (160 °F).
  4. Toast the cut sides of the buns in the same pan.
  5. Build each burger with lettuce, the patty and tomato.
