Coarsely ground coffee steeped in cold water overnight gives a smooth, low-acid concentrate that keeps for a week in the fridge. All it takes is a jar and a filter.
Makes about 1 litre of concentrate (8 drinks) · Prep 10 min · Steep 12–18 hours
Ingredients
- 125 g coffee beans, ground coarse
- 1 litre cold filtered water
- Ice, to serve
- Milk or water to dilute, to taste
Method
- Put the ground coffee in a large jar and pour in the water. Stir so all the grounds are wet.
- Cover and leave at room temperature for 12–18 hours. Longer gives a stronger concentrate.
- Line a sieve with a paper coffee filter or a clean cloth and strain the coffee slowly into a clean jar.
- Refrigerate the concentrate. It keeps for up to a week.
- To serve, fill a glass with ice and mix one part concentrate with one part cold water or milk.

Straining the concentrate after an overnight steep.
Tips
- Grind coarse, like rough sand; fine grounds make the coffee muddy and hard to strain.
- Freeze some of the concentrate in an ice-cube tray so melting ice does not dilute the drink.
